• 8 ½ oz (250 g) pie crust dough
  • ½ oz (15 g) butter
  • 1 cup (25 cl) cream
  • 2 oz (50 g) sugar
  • 5 drops vanilla extract
  • 1 1/8 lb (500 g) Ontario blackberries
  • 3 ½ oz (100 g) Ontario currant jelly

1. Preheat the oven to 390˚ F.
2. Roll out the dough. Line a greased tart pan with it. Prick the dough with a fork and bake for about 20 min.
3. Take the pan out of the oven and let cool.
4. Meanwhile, prepare the topping: whisk the cream in a bowl, and then add the sugar and vanilla extract.
5. Fill the tart crust with this mixture. Arrange the blackberries on top in concentric circles.
6. In a saucepan, heat the currant jelly over low heat. Cover the blackberries with this mixture and serve.
